????Our first attempt for Valentines Day!
✅We wrapped our fillet of beef in clingfilm yesterday and left it in the fridge overnight
✅Today, we seasoned our beef with salt and pepper and seared it in a hot pan in olive oil and butter. Once seared, we brushed it with dijon mustard and allowed it to cool
✅Next we fried off our wild mushrooms (cut finely) and thyme leaves in olive oil, butter, salt, pepper and mixed herbs. We kept these frying for 15 minutes until they became paste like. We then left them to cool
✅We cut our puff pastry into rectangles and left them in the fridge
✅We then laid out clingfilm and overlapped 8 slices of Parma ham. We then added our Mushroom paste
✅Next we seasoned our seared beef fillet in salt, pepper and garlic salt and wrapped it in our Parma ham, mushroom and clingfilm and left it in the fridge to set for an hour
✅We then egg washed our pastry and covered our Parma ham wrapped fillet. We then egg washed our pastry again with egg wash and re-wrapped it in clingfilm and allowed it to set in the fridge for 30 minutes
✅Once chilled, we scored the pastry and added more egg wash. We got an oven tray boiling hot to ensure the bottom of the pastry cooked instantly (rather than sogging). We cooked the Wellington at 200 degrees for 35 minutes
✅Once cooked we allowed it to cool for 10 minutes
✅Served with a red wine sauce of: shallots, peppercorns, 1 x bay leaf, thyme, red wine vinegar, red wine, butter and beef stock
????Not bad for a first attempt
