Tonight’s dinner: Shrimp & Chickpea Curry with leftover brown rice ???? ????

I have two words for you: holy delicious!!! This curry was so good, and I was surprised that it only took about 15 minutes to develop so much flavor. The sauce was perfectly spicy, creamy, and rich – exactly what you would expect from a curry dish. Curries can be intimidating, especially if you’re like me and don’t cook with spices like garam masala and coriander very often. But this recipe was so easy, so quick, and really made me want to cook curry dishes more often. We loved it!! And my husband loved that there were barely any dishes to clean because everything was cooked in one pan ????????????

???????? Toddler review: We deconstructed this dish for Tyler so he wasn’t intimidated by such a creamy and spicy dish. He’s not a big tomato sauce person, so I put a shrimp with minimal sauce on it and gave him a yogurt dipping sauce. I also served him some rice, and a single chickpea for exposure. He ate everything, minus the chickpea! We’ve come a long long way from eating no meats and no grains but bread! ????????????????

⭐️ I added chickpeas to the recipe to provide a little more nutrients to this dish, and it was perfect! I also used turmeric instead of curry powder. It’s a great dish to prepare If you have leftover rice on hand – or cook up some white or brown rice to go with it. If you are craving something warm and decadent, you have to try this recipe!
